Jasper made this pie a few days ago and it was so delicious! We had picked a full bag of green mangoes from the tree by the beach a few days before. After a few days in the sun they were still sour, but had soften up a little. This pie tasted almost like rhubarb pie, sour and sweet.
What you need:
For the mango jam:
- 2-3 green mangoes
- 3 spoons of sugar
- lemon juice
- water
- raisins
For the crumble:
- white flour
- 1 egg
- little salt
- oil or butter
- 3 spoons of sugar
- vanilla extract
Steps to do:
Make mango jam by boiling the mango pieces in a little water and sugar. Add the lemon juice and the raisins. Cook until it has a jam like texture, not too liquid.
Make the crumble by mixing all the ingredients into a soft dough.
Place wax paper in a baking tray. Press a layer of dough on the bottom and sides, but keep some dough left for the top. Pour the mango jam over the bottom layer. Crumble the remaining dough on top of it.
Bake on a low heat until the crust becomes brown.
